I am trying to flash a phone from 2004 (it a nokia 7600 nmm-3).

Any help you could give me would be amazing!

I tried using JAF and it is quite good, but I get an error 'Error getting flash id'

Do you know anything about how to solve this?

Unfortunately not.

Although maybe try to flash as Dead USB.

LOL, Nokia 7600 doesn't support flashing by USB. You can change firmware only by service box.
